There are tracks that don't change up the beat drastically and manage to keep things interesting. Other tracks really change things up constantly.

In the tune I started most recently, I took a long drum track...3 minutes plus...and chopped the whole thing up for my drum track...so each kick, snare etc is "unique" in it's velocity, timbre etc.

I know I sound like a broken record, but I think deep dubstep is a good example of keeping sparse, same-y beats interesting for a whole track. Incidental percussion elements are key. I think keeping the same MIDI patterns, but changing up the sounds that are triggered by the MIDI patterns is a good way to work. It's subtle, effective and won't break the pacing of your tune.

make a few loops, one could be in 7/8 another in 12/8 the 7/8, vary each bar make one three bars long the other 2 bars long, splice together the audio tracks to get a decent rhythm, and then if you want layer it with other sounds like a kick and a snare,
